Marinate: Place the salmon fillet on a plate and coat both the sides of the salmon with garlic powder, pepper powder, red chili powder and salt. Let it marinate for a few minutes while you chop the garlic and cherry tomatoes.
Cook: Heat a cast iron pan and add Olive oil or butter. The add the chopped garlic and fry for 2-3 seconds.
Gently place the salmon fillet on the fried garlic and add the chopped cherry tomatoes. Cook the fish for 5 minutes and then carefully flip the fish using a spatula. Cook for another 5 minutes.
Garnish: Garnish with chopped fresh coriander leaves and juice of half a lemon.
Serve: Serve hot. Top the fish with the remaining juices and fat from the pan.
Notes
If you prefer to use smaller pieces of fish you can cut the fish into at least 2 inch pieces.
Cherry tomatoes can be substituted with large tomatoes too. Slice the tomatoes into smaller pieces and then add to the recipe.
Add the spices as per preference of heat.
Keep checking the fish while cooking to avoid over cooking.
You can also bake this recipe in the oven at 180°C for 15-20 minutes.
