Ingredients Notes & Substitutions
Chicken: Chicken breasts, thighs, or wings go well with this recipe. I have used boneless skinless chicken breasts for this recipe here.
Rosemary (dried or fresh): I love using dried and fresh rosemary for this recipe. Both taste exceptionally well but using fresh herbs does add extra flavor.
Red chili powder/paprika: I love some extra heat in my grilled chicken. Use paprika as per preference.
Salt & Pepper: Salt and black pepper powder or crushed for seasoning. Add as per preference.
Olive oil: Extra virgin olive oil is used for cooking the chicken but you can alternatively use butter too.
Crushed garlic: Freshly crushed garlic cloves is best for this recipe but store-bought garlic paste or garlic powder can also be used as a substitute for marination.
Lemon juice: Freshly squeezed lemon juice is used but lime juice can also be used. You can also use ready-to-use lemon juice too.

How to Make Rosemary Chicken? Step By Step Photo Guide
1. In a small bowl mix all the ingredients for marination: Rosemary, minced garlic, lemon juice, paprika (red chilli powder), black pepper powder, 1tbsp olive oil, and salt.
2. Take 2 whole chicken breasts in a bowl. Gently tap the pieces with a tissue (paper towels) to remove excess water.
3. Rub the prepared marinade on the chicken breasts thoroughly. Set this aside for at least 30 minutes. For best results, you can prepare this a day before you plan to grill the chicken. Marinate and keep the chicken in the fridge.
4. Heat a grill pan or large cast iron skillet and add some olive oil. When the oil is hot place the chicken pieces and cook on each side for 5-10 minutes on medium-high heat.
5. Carefully flip the chicken and cook for 5-10 minutes more or till the chicken is cooked and is golden brown in color.
6. Remove the chicken pieces on a serving tray.
7. In the same pan add 1 onion sliced thinly. The onions will absorb the left over juices and fat from the chicken breasts.
8. When the onions are caramelized serve the onions with the grilled chicken. Garnish with any herb of choice, preferably chopped parsley or coriander.
