Ingredients

Chicken Wings: I cut them in half from the joint, but they can also be used as whole chicken wings.

Flour: A mixture of all-purpose flour and cornflour (cornstarch).

Garlic: Minced or finely chopped fresh garlic is used to make the sauce.

Spices: Paprika or red chili powder, crushed black peppercorns, garlic powder, onion powder, and salt.

Soy Garlic Sauce Mix: Dark soy sauce, honey, rice vinegar, sesame oil, and black pepper powder.

Oil for pan frying and preparing the sauce. I like using light olive oil.

Garnish: Toasted sesame seeds and finely chopped spring onion or scallions.

Step-by-Step Instructions

Step 1: Marinate the Chicken

In a large mixing bowl, combine 800 grams of chicken wings with paprika, black pepper, garlic powder, onion powder, salt, all-purpose flour, and cornstarch.

Add 1⁄4 cup of water and mix thoroughly until the wings are coated in a thick, paste-like marinade.

Let them rest and marinate for about 10 minutes.

Step 2: Fry the Chicken Wings

Heat ½ cup of oil in a large skillet over medium heat. Arrange the chicken wings in a single layer, leaving space between each piece.

Fry for a few minutes on each side until golden brown, crispy on the outside, and fully cooked through—this should take about 10–15 minutes.

Step 3: Make the Soy Garlic Sauce

In a small bowl, combine 2½ tablespoons soy sauce, 1½ tablespoons honey, 1 teaspoon rice vinegar, 1 teaspoon sesame oil, and ½ teaspoon crushed black peppercorns. Set aside.

Step 4: Sauté Aromatics

Heat 1 tablespoon of oil over medium heat in a large wok or skillet. Add 1 tablespoon of finely chopped garlic and 1 teaspoon of red chili flakes. Sauté for 10–15 seconds, just until fragrant—be careful not to burn the garlic.

Step 5: Cook the Sauce

Pour in the soy sauce mixture and let it simmer for about 2 minutes, allowing it to thicken slightly into a sticky glaze.

Step 6: Coat the Chicken

Step 7: Garnish and Serve

  • Double-fry for extra crispiness: Want super crispy wings? Fry them once, then give them a quick second fry in hot oil. It’s a game-changer for that crunchy texture.
  • Sesame oil = flavor bomb: A little sesame oil in the sauce adds that perfect nutty depth. But if you’re making a big batch for a crowd, consider skipping the sesame oil and seeds—just in case of allergies.
  • Sauce while they’re hot: Toss the wings in the sauce right after frying, while they’re still hot and crunchy. This helps the sauce stick better and keeps them from going soggy.
  • No honey? No problem: You can swap honey with maple syrup, corn syrup, or brown sugar. Both work great and still give that nice sweet balance.

  1. To cook the chicken wings in an air fryer, start by lining the basket with air fryer-safe parchment paper. 
  2. Arrange the marinated wings in a single layer, making sure to leave space between each piece for even cooking.
  3. Lightly spray the wings with oil to help them crisp up. 
  4. Air fry at 200°C (400°F) for 10 minutes, then flip the wings and cook for another 10 minutes, or until golden and crispy.
  5. Once done, toss the hot, crispy wings in the prepared soy garlic sauce until well coated. Serve immediately and enjoy!

Baked Soy Garlic Chicken Wings In the Oven

  1. To bake the chicken wings, preheat your oven to 200°C (400°F) for about 10 minutes.
  2. Place a wire rack over a baking tray and arrange the marinated wings in a single layer, leaving space between each piece for proper airflow and even cooking.
  3. Lightly spray the wings with oil, then bake for 10 minutes. Flip the wings, spray a little more oil, and bake for another 10 minutes or until they’re golden brown and fully cooked through.
  4. Once done, toss the hot, crispy wings in the prepared soy garlic sauce until evenly coated. Serve immediately and enjoy!

Notes

Air Fryer:
Line the air fryer basket with parchment paper. Arrange marinated wings in a single layer with space between them. Spray lightly with oil.
