Ingredients and Substitutes
Bread Slices: You can use any type of bread: sandwich bread, whole wheat bread (brown bread), artisan breads or sourdough bread as a base. The slices should be thick and big enough to handle some toppings.
Cheese: Mozzarella cheese. Cheddar, regular Indian Amul cheese (processed cheese), or a mixture of your favourite cheese can also be used. It is better to use cheese that melts well.
Chilli: Fresh green chillies and dry red chili flakes.
Garlic: Finely chopped garlic. You can skip garlic if making for kids and they do not enjoy garlic. Fresh garlic can be substituted with garlic powder.
Herbs: Finely chopped coriander leaves or parsley can be used for garnish.
Butter: Regular table butter is applied on the toasts for crispy chilli cheese toasties
Salt for seasoning. Crushed black pepper can also be added for some extra flavor.

How to Make Chilli Cheese Toast
In a mixing bowl add 150 grams of grated mozzarella cheese (or cheese of your choice), 1/2 tsp red chilli flakes, 1/2 tsp finely chopped green chilli (adjust the chillies as per preference), 1/2 tsp finely chopped garlic (or 1/2 tsp of garlic powder), and a pinch of salt. Mix the ingredients with a fork and set aside.
Spread 1/2 tsp butter on one side of the bread slices. Top the buttered side of the bread with 1 tbsp of the chili cheese mixture. Do this to all the bread slices.
On tawa over the stove
Heat a tawa or flat frying pan on medium heat. Add 1/2 tsp butter to the pan and place 1 to 2 slices of the bread with cheese side up.
Reduce the heat to low and place a high-rise lid on top of the slices. Let it toast till the cheese melts and the bread has crisped up from the bottom.
Remove the lid and carefully remove the cheese chilli bread. Repeat for all the slices of bread and serve it hot.
In an oven
To make the cheese chilli toast in an oven, preheat the oven to 180 degrees C for 10 minutes.
Line a baking tray with parchment paper (baking paper) and place the prepared bread slices with the cheese chili mixture.
Place the tray in the oven and toast for 10-12 minutes, or till the cheese has melted and has started to become golden brown.
Remove the toasted cheese chilli bread and place it on a wire rack for a few minutes.
Cut the hot and spicy chilli cheese toasts into smaller pieces and serve with your favourite dip, sauce, or tomato ketchup.
